"Medium garnet black color. Fruity, floral aromas and flavors of spiced berries and citrus, flowers, and tapioca with a silky, lively, fruity medium-to-full body and an effortless, delightful, long pomegranate, fruit custard tart, spiced nuts, and sassafras finish with chewy, earthy tannins and moderate oak. A brawny, chewy merlot with bright fruit and zippy acidity."

French Merlot is championed in the costliest wines of the world., reaching giddy prices. Two affluent businessmen made the news by walking into Club 21 in NYC for lunch and purchased two bottles of 1982 Chateau Petrus (100% Merlot) for $16,640.
After a careful field selection and harvested on Oct 13th, grapes were gently crushed and put in open top fermenters, where they received three days of cold soak. The grapes were gently crushed, and cold soaked for three days before inoculation with Pasteur Red yeast. Fermentation was held at a constant 80°F for 14 days and then the wine was gently pressed and racked to French oak barrels for aging. After 15 months the wines were settled, fined, and gently filtered before bottling. Lovely now, or hold up to 3 to 7 years.
