This is a seductive and enchanting wine, both for its aromatic quality and flavor and for its magical color. It creates a fresh impression on the nose and on the palate, with floral and red fruit notes and watermelon; with a balanced acidity and mouthwatering freshness.
Versatile For Today's Lifestyle
Being neither red nor white, being seated on the fence makes rosé wines particularly versatile on the table and a wine for today's lifestyle. Perfect of course for summertime sipping, but not a mere one season wonder; safe some for the fall too when you can pair it with roasted squash and poultry.
Grapes were gently crushed and the skins were left in contact with the juice for a couple hours when it was pressed to a tank. Two days later it was racked into barrels for fermentation. Fermentation continued for 40 days until dryness. We used seasoned French oak barrels for this wine. After five months in oak, the wine was racked into a tank, then gently fined, and loosely filtered before bottling. Enjoy now for primary fruit flavors, but a year or so will allow savory and herbaceous flavors to evolve.
