Bordeaux Has 2-1/2 Times More Merlot than Cab Planted
In California, Cab is thought of as the King. In France Merlot is championed in some of the costliest wines in the world, reaching giddy prices. Two affluent businessmen made the news a while back by walking into Club 21 in NYC for lunch and purchasing two bottles of 1982 Chateau Petrus (100% Merlot) for $16,640.
Winemaker Notes - Blend: 79% Merlot, 16% Cabernet Sauvignon & 5% Petit Verdot
After a careful field selection and hand harvesing, grapes were gently crushed and put in open top fermenters, where they received three days of cold soak. The grapes were gently crushed, and cold soaked for three days. Fermentation was held at a constant 80°F for 15 days and then the wine was gently pressed and racked to French oak barrels for aging. After 16 months the wines were settled, fined, and gently filtered before bottling. Lovely now, or hold up to 5 to 8 years.
