2006 Sauvignon Blanc

This is our 16th vintage of Sauvignon Blanc. Each year we barrel ferment and age it to give it body and a smooth finish. Concentrated, rich and opulent with limeade or lemon-drop flavor. Aromas of pineapple and lime, with an underlaying earthy note. Finishes with a blast of lime and minerals. Outstanding with virtually any fish dish or as an aperitif. Winemaker's notes

Harvested on September 26th, the fruit arrived at the winery with a perfect balance of sugars and crisp acidity. As with all of our white wines, the grapes were crushed directly to the press, and cold settled for 24 hours before being transferred to 100% seasoned small oak barrels for fermentation and sur-lie ageing. Malolactic fermentation was stopped at about 20%, and the wine was blended with 3% Semillon and bottled after six months of aging. This vibrant white is best consumed young, by the end of 2010.

It is great with chevre or other

fresh goat's milk cheeses.
