2007 Merlot - February Special

Bright red fruit- cherry to boysenberry, splash of cranberry. Medium bodied mid-palate, but a stuctured finish, showing a hint of spicy, toasty oak along with some lingering tannins. For our 2007 vintage we chose to keep it 100% Merlot.

Winemaker's notes
Harvested on Oct 9th, the grapes were crushed and placed in open top fermenters for a three day cold-soak and then innocutated with Pasteur Red yeast. After nearly two weeks fermentation was completed, and the wine was transfered to older French oak cooperage for ageing. After 19 months of barrel ageing the wine was fined, gently filtered and bottled. This vintage is very pleasant now, but has enough balance and structure to age for a few years, if you appreciate a little bottle age.
