2007 Cabernet Franc

A perennial favorite of our wine club - this is a delicious example of that "other" Cabernet, which is actually a much older grape variety than Cabernet Sauvignon.

Cabernet Franc is very versatile wine. It offers many of the positives of both Merlot and Cabernet Sauvignon. Coincidentally, this vintage of our Cabernet Franc was blended with 5% Merlot and 5% Cabernet Sauvignon, which we felt enhanced it.

We’ve been sold out of Cabernet Franc again for way too long! Typically aromatic, with jalapeno (or sweet red pepper), smoky-paprika and violets on the nose. Good length, with rich dark cherry fruit flavors, velvety texture and medium tannins to finish. Nicely balanced and showing very well for a young wine. We often serve Cab Franc with roast pork or turkey as it is very versatile and food-friendly.

Winemaker's notes

Harvested on Oct 24th, grapes were gently crushed, and cold soaked for three days before innoculation with Pastuer Red yeast. Fermentation was held at a constant 80°, and then the wine was gently pressed and racked to French oak barrels for ageing. After 19 months the wines were settled, fined, and gently filtered before bottling. Lovely now, or hold up to 4 years.


Pairing with food

Fantastic with fruit glazed pork chops or

pork loin roast. Also pairs well with

lamb kabobs.

Matches with cheese

We love this wine with Cypress Grove Lamb Chopper, or aged pecorino sheep's milk cheese.
