2005 Cabernet Franc

A perennial favorite of our wine club - this is a delicious example of that "other" Cabernet, which is actually a much older grape variety than Cabernet Sauvignon.

Elegant and smooth, with a solid core of blueberry/cherry fruit. Quite aromatic, with raspberry leaf, violets, and a light smoky-gamey note. Flavor of violet pastille leads to a hint of cranberry in the finish.

Winemaker's notes

Harvested on Oct 31st, grapes were gently crushed, and cold soaked for three days before innoculation with Pastuer Red yeast. Fermentation was held at a constant 80°, and then the wine was gently pressed and racked to French oak barrels for ageing. After 18 months the wines were settled, fined, and gently filtered before bottling. Lovely now, or hold up to 3 years.


Pairing with food

Fantastic with fruit glazed pork chops or

pork loin roast. Also pairs well with

lamb kabobs.

Matches with cheese

We love this wine with Cypress Grove Lamb Chopper, or aged pecorino sheep's milk cheese.
