2007 Cabernet Sauvignon

Mainly raspberry and herbal aromas with a touch of earthiness. Elegant with a smooth, velvety mouth-feel, but some drying tannins that help make it very food friendly. Flavors are red fruits predominately with boysenberry and a hint of chocolate in finish. Uncork now or hold five to ten years.

Winemaker's notes

Harvested on Oct 16th and 24th, these grapes had perfect balance between sugar and acidity as well as great color. Crushed, cold soaked and fermented in open top fermenters, the wine was pressed, settled and aged in seasoned traditional French Bordeaux barrels. After 20 months of ageing, we put together the blend with 9% Merlot and the wine was fined, gently filtered and bottled.

Roasted meats match well, as does

a hearty winter soup.

Serve with a blue cheese such as Roquefort, or sharp aged cheddar
